Mini Strawberry Shortcake

INGREDIENTS
1/2 butter, softened (1 stick)
1/2 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup all-purpose flour
3/4 cup fresh Plant City strawberries, chopped
DIRECTIONS
Preheat oven to 350 degrees.
Lightly grease cookie sheets or line with parchment paper.
In a medium bowl, mix together baking soda, baking powder, salt and flour.
In a stand mixer, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla until combined. Mix flour mixture into wet mixture until dough is smooth.
Stir in strawberries until well combined.
Drop the dough by tablespoonfuls onto prepared cookie sheets. Balls of dough should be 2 to 3 inches apart.
Bake for 8 to 10 minutes, or until edges are lightly golden. Let cool for 3 minutes before transferring to cooling racks.
Serve with fresh whipped cream.
